The recipe for "Ruth's Favorite Apple Pie"--

1 or 2 9-inch Unbaked Piecrust(s)
7-8 cups thinly sliced, peeled, and cored apples of various varieties
2/3 cup sugar
2 tablespoons flour
1 teaspoon grated lemon peel (optional)
2 teaspoons lemon juice
1/2 to 3/4 teaspoons cinnamon
1/2 teaspoon nutmeg
Pinch of salt
1 tablespoons butter
Maple syrup (optional)


1. Prepare unbaked pie crust with whatever edge you wish. Preheat oven to 425 degrees.
2. In large bowl, toss apples with next 7 ingredients. Arrange in pie crust and dot the filling with butter.
3. Cover top of pie with second crust or foil; place pie on a baking sheet to catch any drips during the baking process.
4. Bake 45 minutes; remove foil from top of pie. Bake 10 to 15 minutes more until the apples are tender and can be pierced through with a fork.
5. If you like, add a New England touch and drizzle maple syrup over the top of the hot pie. Serve warm or cold.
